Low Fat Gluten Free and Vegan Chocolate Cake Mix Cookies

As an added bonus, these chocolate cake mix cookies are also:

  • Lower in fat thanks to swapping out the oil for applesauce
  • Lower in sugar, since I added some regular gluten free flour into the mix
  • Made with only five ingredients, including water
  • Extra delicious combined with your favorite dairy free ice cream for an epic, healthier ice cream cookie sandwich!

Gluten Free and Vegan Chocolate Cake Mix Cookies Recipe

1 cup chocolate cake mix (I used Fun Foods For All's mix - which they kindly gifted me - and I highly recommend!)

1/2 cup all-purpose gluten free flour (I used Loraine's Gluten Free, which I won in a giveaway)

1/4 cup applesauce

vegan egg replacement from Bob's Red Mill (I use this is in most of my baking)

1/4 cup + 2 TBSP water

How to Make Your Gluten Free and Vegan Chocolate Cake Mix Cookies

Like most of the gluten free and vegan recipes I share, this one is super easy to make!

First, preheat the oven to 350 degrees Fahrenheit. Then make your vegan egg and give it a few minutes to gel. Once it has, and add in your applesauce, chocolate cake mix, all-purpose flour and water. Mix well and then use a tablespoon to scoop your batter onto a parchment-lined baking tray. 

Bake at 350 for 8-10 minutes. Let cool and dig in!

How to make Gluten Free and Vegan Ice Cream Sandwiches

If you want to take your chocolate cake mix cookies to the next level, you can use them to make gluten free and dairy free ice cream sandwiches, like shown in my photos! 

All you need is your favorite dairy free ice cream and gluten free sprinkles. I used Good Kind gluten free and vegan ice cream, which I won in a giveaway and absolutely love. Simply pick two similarly sized cookies, preferably cooled. Then scoop out some ice cream and place it on top of one cookie, followed by sprinkles and the other cookie on top. If needed, place the sandwich in the freezer for 5-10 minutes to solidify.  

Then enjoy!

  1. I was diagnosed as HEPATITIS B carrier in 2013 with fibrosis of the
    liver already present. I started on antiviral medications which
    reduced the viral load initially. After a couple of years the virus
