Cookie Dough Peanut Butter Cups (Gluten Free)

Need an easy Valentine's Day dessert that everyone will love? These homemade gluten free peanut butter cups will blow your mind...especially since they're made with crunchy gluten free cookies for some sweet crunch in the middle.

And even though this gluten free peanut butter cup recipe sounds decadent, they're healthier than most gluten free candies. They're sweetened only with date syrup (and the sugar in whatever gluten free cookies you pick) and are easily made nut free and vegan! Plus, no baking is required!

Gluten Free Peanut Butter Cup Recipe

1 cup of melted cacao butter wafers (I used from Foods Alive, here)

1 cup of cacao powder

1/4 cup of date syrup 

Your choice of seed or nut butter (I used Seeds of Collaboration Tahini for this batch, but any works!)

Your choice of gluten free cookies (I used High Key Snacks' Chocolate Chip Cookies)

How to Make Your Vegan Peanut Butter Cups

To make, melt your cacao butter wafers in the microwave until smooth. Combine with the cacao powder and date nectar. 

Next, fill a reusable muffin tin about 1/4 of the way with your chocolate mixture. Then add a dollop of nut butter and some crumbled gluten free chocolate chip cookies, and cover with more of the chocolate mixture. 

Freeze for at least an hour and then enjoy!
