Chocolate Filled Gluten Free Banana Donut Holes (Vegan)

I'm always down for donuts, and when they're gluten free donuts filled with vegan chocolate...well, who can turn those down?? Now that temperatures are getting colder, I'm craving banana bread and pumpkin bread more than ever...so I whipped up some banana bread donuts with a creamy chocolate filling and a crunching cinnamon sugar coating!

And even though these donuts sound decadent (and taste like it!), they're healthier than the fried version. Not only are these gluten free donuts baked, but also they're mainly sweetened with mashed banana. Plus, they're vegan, dairy free and nut free as well! So let's get baking...

Gluten Free Chocolate Filled Donut Holes Recipe

2 mashed bananas

1 cup All Purpose GF Flour

1/2 cup Coconut Flour

1 cup water/milk

1 tsp baking soda

1 tsp cinnamon

3 drops vanilla stevia

1 Beyond Good chocolate bar

Optional: 3 TBSP cinnamon sugar

How to Make Your Gluten Free Stuffed Chocolate Donuts

First, combine 2 mashed bananas, 1 cup all purpose flour, 1/2 cup coconut flour, 1/4 cup coconut sugar, 1 cup water/milk, 1 tsp baking soda, 1 tsp cinnamon and 3 drops vanilla stevia. Then scoop half a teaspoon of batter into a muffin tin, place a small piece of Beyond Good chocolate in the center, and cover with more batter. 

Bake for 16-20 minutes and let slightly cool. Roll in cinnamon sugar and add melted chocolate drizzle (optional). Then dig in!
