3-Ingredient Blueberry Cheesecake Bagels (Gluten Free, Egg Free)

I've always been a big believer in snack time. As a child, tasty after-school snacks were the highlight of every school day. As a grad student now, delicious snacks keep me fueled and motivated, no matter how busy my day becomes. But finding a scrumptious snack that's full of high-quality ingredients is harder than it sounds...which is where Clover Sonoma - and my delicious mini blueberry cheesecake bagels - come in!

3-Ingredient Blueberry Cheesecake Bagels (Gluten Free, Egg Free)

Clover is a 100-year-old, family owned and operated dairy company from Petaluma, California. How are they different than a lot of other dairy brands out there? Well, Clover was the first dairy in the U.S. to become American Humane Certified for the humane treatment of their cows. As a newly certified B Corporation, Clover also meets high standards of social and environmental performance. (In other words, their company does just as much good for the world as their yogurt does for our taste buds!). And thanks to their Clover Promise of Excellence, Clover ensures that all the small family farms they work with have the same values and standards.

Of course, I'm also a huge fan of the fact that all of Clover Sonoma's products are "gluten-free, with the exception of specific ice cream flavors that will be labeled as containing ‘wheat’ in the nutrition section." Which is how I know that Clover's quirky mascot, Clo the Cow, is over the moooon about me transforming Clover Sonoma's Whole Milk Greek Yogurt into some delicious gluten free bagels!

3-Ingredient Blueberry Cheesecake Bagels (Gluten Free, Egg Free)

And guys. Just let me say that these gluten free bagels are out-of-this-world tasty. Clover's Blueberry Whole Milk Greek Yogurt keeps the inside of the bagels super soft and spongy and adds tangy undertones reminiscent of your favorite cheesecake. Meanwhile, the optional aquafaba "egg wash" and toppings create a nice, crunchy crust on each bagel top. Since Clover's Greek Yogurt is high in protein and calcium, low in sugar and packed with juicy organic fruit, these bagels are also the ideal mid-morning or afternoon snack when you're craving something sweet. Plus, they're portable, super kid-friendly and only require three ingredients (plus the optional toppings) and less than 45 minutes to make!

Ready to get your own gluten free bagels rollin'? Start by gathering the following ingredients below:

Ingredients for Greek Yogurt Bagels

2/3 cup self-rising gluten free flour (or 2/3 cup all-purpose gluten free flour + 1 tsp baking powder)
One 5.3 ounce container of Clover Sonoma Blueberry Whole Milk Greek Yogurt
Shake of cinnamon
Optional: enough aquafaba (the liquid in a chickpea can) to coat the bagels and help with browning
Optional toppings: extra cinnamon, chia seeds, acai powder

How to Make Your Gluten Free Bagels

Making these Greek Yogurt bagels is a pretty dang easy, and it all starts by preheating your oven to 350 degrees Fahrenheit. While your oven is heating up, pour your self-rising flour (or your gluten free all purpose flour and baking powder) into a bowl with a little cinnamon. Mix thoroughly, and then open a Clover Sonoma Blueberry Whole Milk Greek Yogurt (you can use another flavor instead, but for the blueberry cheesecake flavor, blueberry is ideal!). Clover's Greek Yogurt works perfectly for this recipe because Clover strains their yogurt in small batches, which makes it super thick and creamy - exactly what you need for bagels.

Mix the yogurt thoroughly and then pour it into your dry mixture. After mixing your wet and dry ingredients together in the bowl a few times, your gluten free bagel dough should be crumbly and a little sticky.

Once you’ve incorporated all the ingredients, lightly flour a counter or baking mat and kneed your bagel dough until it holds together and is pliable without being overly sticky. I like my snacks on the smaller side, so I made mini gluten free bagels and separated my dough into seven roughly equal parts. For larger bagels, just use more dough for each. Whatever size you choose, you'll roll each section into a cylinder under your palm, and then shape them into circular bagels.

Next, lightly coat your bagels in aquafaba. You could also use egg wash, but aquafaba (or the liquid from a can of chickpeas) is an egg-free option that will give you the same browning effect. The final step to this gluten free bagel recipe is sprinkling on any of your optional toppings. I used chia seeds, extra cinnamon and açaí powder, but you can use whatever toppings are calling your name.

Line a baking tray with parchment paper (warning: these gluten free bagels get crunchy on the bottom and tend stick to whatever they're cooked on) and pop your bagels into the oven for around 24 minutes. Once they've cooked, you can give your bagels deliciously browned tops by moving your baking tray to the top oven rack and putting the oven on low broil for two minutes. Rotate the tray halfway through and be sure to keep your eye on the bagels while they broil. They will brown super quick!

How to Turn These Gluten Free Bagels Into the Ultimate Snack

After your gluten free bagels are done baking, you can dive right in! If you want the full blueberry cheesecake bagel experience, I’d recommend packing the following goodies in your lunch box: one or two of these homemade blueberry bagels, a handful of fresh or frozen berries and one Clover Sonoma Organic Cream on Top Blueberry Yogurt! This yogurt features fresh fruit on the bottom, thick yogurt in the middle and a layer of pure cream on top, which makes it an addictively creamy dip for your gluten free bagels. Or, you can use this yogurt to make a few mini blueberry cheesecake “bagel sandwiches” like I did!

For the ultimate blueberry bagel sandwich, I slathered a thick layer of Clover Sonoma's Organic Cream on Top Blueberry Yogurt between two pieces of bagel. I added a few fresh blueberries and sprinkles of chia seeds for extra juiciness and crunch, and oh my golly goodness. Sweet, creamy yogurt + soft and slightly tangy bagels = one heck of a tasty bite. If you want to pack a snack that will make you look forward to your snack break, this Clover Sonoma yogurt and gluten free bagel sandwich needs to appear on your weekly menu plan ASAP.

Like always, I encourage you to make this gluten free bagel recipe your own. Try different toppings or use a different flavor of Clover Sonoma's Whole Milk Greek Yogurt for a different flavor of bagel. Clover Sonoma also offers vanilla bean, raspberry, honey and plain varieties, so the bagel options are almost endless! Same goes for using Clover Sonoma's Organic Cream on Top Yogurt as a dip or bagel sandwich spread. Clover has six different kinds of Cream on Top yogurts to choose from (vanilla, forest berry, strawberry, blueberry, peach and maple) so you can change up your mini bagel sandwiches to your heart and stomach's delight.
