No-Bake Coconut Chocolate Energy Balls (Gluten Free, Vegan, Refined Sugar Free)

If there's one healthy snack or dessert I love, it's a delicious no-bake energy balls recipe...and I'm not exaggerating when I say that these no-bake coconut chocolate energy balls are some of the tastiest gluten free snacks I've ever made!
If you have a major sweet tooth like me, the rich chocolatey flavor of these chocolate energy balls will check every box of your sugar cravings - without actually having any refined sugar. Plus, these no-bake energy balls only call for eight ingredients, can be whipped up in 15 minutes or less, and are addictively soft, chewy and crunchy all at the same time. One of the star ingredients is definitely the shredded coconut, which was kindly gifted to me from Anthony's Goods. If you've never tried them before, they're an amazing company that offers a variety of specialty flours, seeds, coffee, supplements and more - much of which are certified gluten free. I've been using their buckwheat groats for years before they reached out, so I was thrilled to get to try out more of their products!
And I promise...whether you use Anthony's Goods shredded coconut or your own favorite brand, you won't be able to stop eating these no-bake energy balls once you've made them. So let's dive right into the no-bake energy balls recipe!
Ingredients for These No-Bake Coconut Chocolate Energy Balls
1 mashed banana, ripe
1/4 cup of shredded coconut (I used Anthony's Goods)
2 TBSP banana flour (I used Just About Foods)
3 TBSP coconut flour (I used Better Body Foods)
1 TBSP cacao powder
2 TBSP pumpkin seeds (I used Foods Alive, who I'm an ambassador for!)
2 TBSP goji berries
2 TBSP puffed rice cereal
How to Make These Vegan Coconut Chocolate Energy Balls
Besides being yummy, these no-bake energy balls are super easy to make! First, mash your banana in a bowl. Then add in the flours, shredded coconut, and seeds. For the ultimate crunchy energy balls, mix all of those ingredients well before stirring in the puffed rice. I've found that mixing the puffed rice too much will make it soggy, so less is more with stirring at that point!
Once you've mixed everything together, start rolling! Put your desired amount of bliss ball batter between your palms (I probably use around one tablespoon of the mix for each of my energy balls) and roll until ball-shaped. Then you can dig into your energy balls...or store them for later!
These vegan energy balls last in the fridge for up to a week (if they don't get gobbled up first), but you can also keep them in a freezer. Just let them defrost at air temperature for a few minutes or so before eating!
How to Enjoy Your Gluten Free Vegan Coconut Chocolate Energy Balls
I love eating these energy balls on their own when I need an easy afternoon snack, but they're also crazy delicious with yogurt, smoothies, nut butter, chocolate...the list goes on and on.

Add more different spices or extracts - I bet mint extract would be a delicious addition and make these energy balls even more festive!
