I don’t know when I first learned that “stressed” backward spells “desserts,” but I do know that gluten free brownies are one of my favorite comfort foods, and these super fudgy banana paleo brownies are no exception!

I’ve thought about sharing this paleo brownies recipe for a while now (and actually already posted it on my Insta a good bit ago, so be sure to follow me there for more early recipe access!) but never got around to it. But after I whipped up another delicious batch of vegan brownies to fuel my recent pack-out to Colorado, I knew I had to give everyone access to this scrumptious gluten free dessert.

Because what’s not to like about rich, SUPER fudgy paleo brownies that are also vegan (and, obviously, gluten free)? Plus, I cut down on some of the fats in a traditional paleo brownie by adding a banana into the mix. Delicious + hidden fruits or veggies = always a win in my house!

Ingredients For This Super Fudgy Paleo Brownie Recipe

1 package of Julie’s Real Paleo Dark Chocolate Brownie Mix
1 gluten free vegan egg substitute by Bob’s Red Mill
1 ripe banana, mashed
1/4 cup of nut butter of your choice
A few tablespoons of water or dairy free milk, if needed

The Special Ingredients For These Vegan Brownies

The two most important ingredients in these paleo brownies - and the ones I can’t recommend substitutions for - are Bob’s Red Mill’s gluten free vegan egg substitute and Julie’s Real Paleo Brownie mix. Bob’s Red Mill’s vegan egg substitute is seriously the BEST egg substitute I’ve ever tried and it has worked flawlessly in every recipe I’ve adapted so far.

Meanwhile, Julie’s Real’s Paleo Dark Chocolate Brownie mix is one of the tastiest gluten free brownie mixes I’ve ever baked. (And don’t get me started on their Paleo Caramel Vanilla Blondie Mix). And while the original recipe on the package calls for an egg and coconut oil, the recipe I’m sharing below is entirely vegan and a little lower and fat. How to Make Your Own Paleo Brownies, ASAP!

Once you get your hands on these two ingredients, the rest of the steps for making these vegan paleo brownies are quite simple.

First, preheat your oven to 350 degrees and create your vegan “egg.” Add one tablespoon of Bob’s Red Mill’s egg substitute to two tablespoons of water, and let it thicken for a few minutes before mashing your banana in the same bowl.

Then add your nut butter and the baking mix. Any nut butter will work (though I highly recommend Julie’s Real Cinnamon Vanilla Almond Butter for the extra spices and flavor).

Finally, stir in the dark chocolate paleo brownie mix and, if necessary, a tablespoon or two of water or dairy-free milk to get a stirrable texture.

Pour into a parchment-lined baking tray (I have always used a 9x9 square) and pop your fudgy paleo brownies into the oven for 20 to 25 minutes.

Keep in mind that because I’ve made these brownies vegan, they are EXTREMELY moist and fudgy. So for best results, let your brownies cool and then store them in the fridge to further solidify into a fudge-tastic gluten free dessert.

Hacks for Crispier Vegan Brownies + Freezing and Defrosting Your Brownies

If you want your paleo brownies to have more crispy and chewy edges, you can omit the extra water/milk from the mix and/or bake the brownies for an additional 8-10 minutes.

Since I love a bit of an underbaked texture for my gluten free brownies, I prefer the initial baking method I mention above, but you do you!

As an added bonus, I also know that these vegan brownies taste just as delicious when frozen and defrosted overnight in the fridge. These are def one of the best gluten free desserts to discover hiding in the back of your freezer.
