Super Easy 3-Ingredient Gluten Free and Vegan Sugar Cookies

Recently, I’ve been on a huge gluten free cookie kick...and one rainly afternoon led me to creating these SUPER easy 3-ingredient gluten free and vegan sugar cookies! Perfect for a random Wednesday night treat or a gluten free and vegan Valentine's day dessert.

These gluten free and vegan sugar cookies are sweet without tasting super sugary, super soft and pillowy and give "regular" sugar cookies a run for their money. Plus, you can use these vegan sugar cookies to make an epic gluten free sugar cookie sandwich combined with strawberries, nut butter and chocolate chips.

Gluten Free and Vegan Sugar Cookies Recipe

Makes around a dozen tablespoon-sized cookies

2/3 cup gluten free and vegan-friendly sugar cookie mix (I used Fun Foods For All's mix after winning it in a giveaway and highly recommend!)

1 vegan egg replacement from Bob's Red Mill (I use this is in most of my baking)

2 TBSP vegan butter, softened (I used Melt Organic, which I won in another giveaway and also love!))

Splash of water or sprinkle of extra cookie mix as needed for a soft, pliable texture that isn't overly sticky.

How to Make Your Gluten Free and Vegan Sugar Cookies

These gluten free and vegan cookies are titled “super easy” for a reason - they really are crazy easy to make!

First, preheat the oven to 350 degrees Fahrenheit. Then make your vegan egg and add in your softened butter, cookie mix and the extra liquid or cookie mix if the batter is too dry or wet. Next, pop your mix into the fridge to chill for 10 minutes.

Once cool to the touch, roll tablespoon-sized balls of batter into balls and press onto a lining baking sheet until around 1/2 inch thick. Put your gluten free sugar cookies in the oven for 8-10 minutes minutes!
