17 Gluten Free Recipes You Need to Make for Cinco De Mayo 2017
With Cinco de Mayo, celebrations come in all shapes, sizes, and flavors. Some might celebrate Mexico's historical (and unlikely) victory over the French centuries ago. Some - like my family - might celebrate a birthday (my little sister's). And some might just use the holiday as an excuse to eat crunchy loaded nachos for dinner.
One thing we can all agree on? Cinco de Mayo is the perfect holiday to enjoy delicious (often Mexican) food with friends and family - and a gluten-free diet shouldn't get in your way.
To make sure everyone can have a scrumptious fiesta, I reached out to some of the blogosphere's best GF bloggers for their favorite Cinco de Mayo recipes. Here are seventeen gluten free recipes that will be perfecto for Cinco de Mayo!

1. Crock Pot Enchilada Stack (Vegan option)
If you want to spend Cinco de Mayo hanging out with your family instead of toiling in the kitchen, the crock pot is your secret weapon. Throw your favorite enchilada ingredients into your crock pot in the morning, and be ready to dig in by late afternoon.
2. Roasted Avocado and Bacon Guacamole - There is Life After Wheat
Avocado + bacon + guac. Do I really need to say anymore? Probably not, but I will anyway - because roasting avocados in the oven is just crazy enough to blow my taste buds away!
3. Chicken Tacos Al Pastor - The Heritage Cook
Combine spiced chicken, a sweet pineapple salsa and the traditional taco toppings for a fiesta your taste buds won't soon forget. To make this meal extra easy, you can even cook the chicken the day before.
4. Mexican Spaghetti Squash Hash browns (Paleo and Vegan) - Strength and Sunshine
If you want to start off your Cinco de Mayo with a bang, try this paleo version of hash browns for breakfast. Loaded with peppers and Mexican spices, this spaghetti squash tastes anything but boring or bland!
5. Grilled Peach Salsa (Vegan) - My Gluten Free Miami
With Spring getting closer, it's the perfect time to Spring-ify your salsa. With tender grilled peaches, crunchy corn, tangy lime juice and plenty of fresh herbs, this recipe is a refreshing twist on the usual dip.
6. Mexican Carrot Dogs with Chunky Salsa Verde (Vegan) - Strength and Sunshine
Who says you can't be vegan and enjoy some Mexican "hot dogs"? Your carrot is coated in a flavor-packed marinade before grilling, and the veggie-loaded green salsa will be sure to wake up your taste buds.
7. Tomatillo Salsa Verde (Vegan) - Grain Changer
Want a homemade dip that spice up your appetizers (or your dinner)? Then this recipe is just what you're looking for. Don't worry if you've never cooked with tomatillos, either; this post breaks down what you should know when using them!
8. Jamaican Jerk Chicken Tacos - My Gluten Free Miami
If you want a unique spin on an old favorite, whip up some spicy mayo to go on your chicken tacos! The best part? That's the most "complicated" step in this recipe!
9. Traditional Tamales (Vegan option) - GF Jules
These tamales are about as close as you can get to the "real" thang while eating a gluten free diet. Simple to make, easy to personalize and even easier to devour!
10. Loaded Potato Wedge Nachos (Vegan option)
To make nachos a little healthier, use oven-baked potato (or sweet potato) fries as the base. Load them up with ingredients like black beans, roasted vegetables, salsa, and avocado, and dig in! This is an especially delicious use for leftover meats, sauces, vegetables, etc.
11. Grilled Tenderloin Tacos with Broccoli Chimichurri - Raia's Recipes
A raw jicama taco shell + marinated pork tenderloin + a bright green broccoli chimichurri = a kind of (delicious) taco you've never seen before.
12. Quick and Easy Shredded Chicken Taco Soup - Fearless Dining
If your weather is looking like Colorado Spring's on Cinco de Mayo (in other words: cold and rainy), soup might be your perfect dinner. This one is simple, veggie-packed and flavorful - what more could you want?
13. Chocolate Tamales - The Heritage Cook
If you want to shock your dessert-loving diners, give the tamale a chocolate-stuffed twist! Although any chocoholic will love the tamale's chocolate flavor, you can also add extras like jam, nut or berries to the chocolate center.
14. Mexican Chocolate Cake with Cinnamon Cream Cheese Frosting - Raia's Recipes
What's a better way to end Cinco de Mayo than by eating a chocolate cake with a lil' kick to it? This cake combines cacao and chili powder - plus cinnamon frosting - for a deliciously spicy Mexican flair.
15. Chocolate Lava Mug Cake (Paleo, Vegan)
Sure, chocolate lava cake might not be a traditional Cinco de Mayo dessert. However, in light of my sister's birthday, I'd be remiss for not mentioning my favorite 5-minute cake recipe.
16. Churro Puppy Chow (Easily Made Vegan) - Grain Changer
You've never tasted a puppy chow like this...but it's so addictive, you'll want to have it on-hand every day of the year.
