Gluten Free Vegan Double Chocolate Chip Cookies - Made with Black Beans!

When it comes to gluten free chocolate chip cookies, I'm always looking for more recipes that come out super fudgy, super chocolatey...and surprisingly healthy. So when I had some extra beans on my hands thanks to 8 Track Foods, I decided to finally experiment with using black beans in vegan chocolate chip cookies. And oh my gosh...let me tell you, I was cynical and these cookies blew me away!

Not only are these double chocolate chip cookies gluten free and vegan, but they're also:

  • SUPER soft and fudgy with just the right amount of crunchy chocolate chips to break it up.
  • Packed with rich, chocolatey flavor - and plant-based protein 
  • Made mostly with very common ingredients you probably already have in your pantry

And, no. They actually DON'T taste like black beans...and even my gluten-loving boyfriend was pleasantly surprised (and happily helped me finish this batch)! So if you want to give these vegan double chocolate chip cookies a try,  let’s dive into what you’ll need to make 'em!

Ingredients for Gluten Free Double Chocolate Chip Cookies with Black Beans

Makes around two baking trays' worth (~ 20) small cookies

1 vegan egg replacement from Bob's Red Mill
2 TBSP vegan butter (I used Melt Organic), softened 
1 can black beans, rinsed 
1/4 cup water
1/3 cup coconut sugar (or regular sugar)
1/3 cup cacao powder (or cocoa powder)
1/2 tsp baking soda 
1 tsp vanilla extra or imitation vanilla 
Desired amount of chocolate chips 
Optional: 5 drops of monk fruit chocolate liquid sweetener or stevia

How to Make Your Vegan Double Chocolate Chip Cookies with Black Beans

Begin by preheating the oven to 375 degrees Fahrenheit.

While it’s warming up, create your vegan egg and give it a few minutes to gel. While it is, blend your rinsed black beans with the 1/4 cup of water in a high-speed blender and blend until smooth. If desired, you can also create this entire recipe in a food processor, but I just mixed manually in a bowl!

Pour the black bean puree in with your vegan egg, and then add all of the other ingredients, including a handful of chocolate chips. Mix until well combined. Then place your bowl of dough in the freezer to chill for 5-10 minutes.

Then grab some parchment-lined baking trays. Using a tablespoon or spoon, portion your batter into cookie-sized portions on the trays. To help the cookies bake optimally, use your tablespoon to slightly flatten/spread out the batter of each cookie (compared to leaving the batter as scooped balls in the tray).

Finally, pop your trays in the oven for around 18-20 minutes. These cookies will not rise very much because of the lack of egg and flour, but they will spread out and puff up some!

Lately, I’ve been loving these gluten free double chocolate chip cookies with yogurt, nut butter and berries as a sweet late-night snack. But considering that these vegan chocolate cookies are flourless and packed with plant-protein, they're not a bad choice for breakfast or a sweet snack either.

  4. What a cool and innovative idea to make vegan cookies! I've heard of black bean patties for burgers, but never heard of using them to make chocolate cookies!
