Super Easy Vegan French Toast Mug Cake (Gluten Free, Nut Free)

So if you're ready to have a gluten free breakfast - or a vegan mug cake dessert - that only has seven simple ingredients, can be made in five minutes or so and is super allergy friendly, keep on scrolling. Just one warning: this super easy vegan french toast mug cake is dangerously addictive. As in, I've eaten it almost a week straight for dessert since I create the recipe. And I have NO regrets!

Ingredients for Gluten Free and Vegan French Toast Mug Cake: 

1-2 medium slices of gluten free bread (I HIGHLY recommend Zukkee's Kitchen sourdough!)

1/3 cup mashed ripe banana ripe

1/3 cup milk or water

1 tsp date syrup (or maple syrup)

1/2 tsp ground chia seeds or chia powder (I used Foods Alive's chia protein powder <-- I'm an ambassador for them!)

1/2 tsp vanilla extract

Sprinkle of cinnamon

Optional: Sprinkle of coconut sugar

How to make Your Gluten Free and Vegan French Toast Mug Cake: 

First, combine all ingredients except the bread and the coconut sugar, and whisk until combined with no clumps. Set aside for a few minutes to “gel” slightly. While waiting, cut your bread slices into 1-inch-by-1-inch cubes. I used one generous slice of sourdough bread from Zukkee's Kitchen. Its slightly sour flavor worked perfectly in this vegan french toast and kept it from tasting too sugary. Depending how big your gluten free bread is, you may use 1 and a half to two slices of bread.

Once your bread is cubed, put them in a mug and pour the banana french toast mixture over it, using a knife or small spatula to make sure the mixture coats all the bread. Sprinkle some coconut sugar on top if desired (it adds some extra browning/caramelization) and microwave your french toast mug cake for 1:30-2 minutes. 

How to Enjoy Your Gluten Free and Vegan French Toast Mug Cake: 

After cooking, all that's left to do is dig in! You can top your vegan french toast mug cake with caramelized bananas if desired, like I did in the photos, or even add some maple syrup or agave nectar if you'd like a sweeter treat.

As for when to eat this...there's no bad time! I've enjoyed it as an easy and sweet gluten free breakfast, but I've also loved it as a night snack when I'm craving a healthier dessert.
