Gluten Free Chocolate Chip Cookies Recipe
1 8.5 ounce cookie mix (I used Eat Gangster's Oatmeal Schmoatmeal cookie mix, which is made using tigernut flour and flakes and grain free!)
1 mashed banana
2 TBSP date nectar (I love Joolie's Dates)
4 TBSP water
3 Undercover Snacks quinoa cookies
Handful chocolate chips
The Two Special Ingredients

Eat Gangster's Oatmeal Schmoatmeal cookie mix and
Undercover Snacks quinoa cookies. Eat Gangster's mixes are made using tigernut flour and flakes, and are grain free, egg and dairy free, nut and seed free and soy and legume free. Meanwhile, Undercover Snacks is a healthy chocolate brand that uses crunchy quinoa, chocolate and a little bit of milk to create healthy cookies that are certified gluten free and certified peanut and nut free.
I'm a HUGE fan of both of these brands (especially since they are women-owned), so I def recommend their products. But you can also swap in similar mixes or crunchy cookies that you have on hand or use this gluten free chocolate chip recipe for inspo!
How to Make Your Gluten Free Stuffed Chocolate Chip Cookies
Like usual, this gluten free cookie recipe is super easy to make.
Preheat the oven to 350 degrees. Mash your banana, and then add all the ingredients except the last two. Roll your dough into 1-inch balls and stuff them with small pieces of the Undercover Snacks cookies and a few chocolate chips. Let rest for 10 minutes and then bake for 12 minutes. And you know what comes next - eating!
