A Few Reasons Why This Healthy Homemade Pop Tarts Recipe is So Awesome:

Before I dive right into the recipe, I thought I'd share a few quick bullet points about why this dairy free pop tarts recipe seriously blew me - and my fam - away:

  • You only need three ingredients to make the homemade pop tarts dough, and five ingredients for the filling. And you probably already have all the necessary ingredients in your fridge and pantry.
  • No dairy is needed, and you can swap the Flax 4 Life cookies with your fave vegan cookie to make homemade vegan pop tarts! 
  • There is NO sugar in the pop tart dough and a relatively small amount in the cinnamon sugar filling and glaze.

So if you're looking for a gluten free dessert that's a lot healthier than its traditional counterpart, uses simple ingredients and is easy enough for your kid to help you make it, keep scrolling. Gluten Free and Dairy Free Homemade Pop Tarts Recipe

Makes enough for two pop tarts.

Cinnamon Sugar Pop Tart Dough:

1/2 cup All Purpose Gluten Free Flour

1 tsp oil

1/4 cup cold water

Heavy dash of cinnamon

Extra flour for sprinkling


Cinnamon Sugar Pop Tart Filling:

1 banana, ripe

1.5 TBSP dairy free butter

1 TBSP coconut sugar

1/2 of a Flax 4 Life Ginger Snap Cookie, crumbled

1 tsp cinnamon

How to Make Homemade Pop Tarts

As with most of my gluten free recipes, making these homemade healthy pop tarts is super easy.

First, heat up a sauce pan to medium heat. Add your dairy free butter and your coconut sugar and cinnamon. Stir as the butter melts and you combine all the ingredients. Once the butter is melted, add your chopped banana and crumbled up Flax 4 Life cookie. Cook until the banana is caramelized - it took mine a couple of minutes. Then set to the side.

Next, preheat your oven to 350 degrees F and create your dough. Combine the gluten free flour, oil, cinnamon and mix well. Then add the cold water and stir with a fork until a dough is formed. Lightly flour parchment paper, and use a roller to roll your dough into a thin sheet. Then cut into four squares, and add your filling to two of them. (You will have extra filling we'll use on top after baking!) Place the remaining two squares on top and use a fork to pinch the borders closed. Be sure to also poke some holes on top so your homemade pop tarts don't explode!

Bake for 20 mins on parchment paper. Top with the remaining filling and dig in!
