Pumpkin Cookie Brownie Bars (Gluten Free, Vegan Option)

And even though these cookie brownie bars sound decadent (and taste like a real treat!), they're healthier than the traditional sl*tty brownies version. Not only are these gluten free and (optionally vegan), but they also don't have any butter -- and do have hidden veggies in the form of pumpkin. So let's get baking...

Gluten Free Cookie Brownie Bars Recipe

1/4 cup rice flour

1/4 cup coconut flour, separated into two 2 TBSP

1/4 cup + 3 TBSP coconut sugar

1/4 cup cacao powder

1/4 cup + 2 TBSP pumpkin puree 

2.5 TBSP nut butter (I used Performance Nut Butter)

1 tsp baking powder

1/2 cup water/milk

Handful of chocolate chips

Sprinkle of cinnamon

3 drops vanilla stevia

How to Make Your Gluten Free Pumpkin Cookie Brownie Bars 

To make these gluten free brownie bars, first preheat your oven to 350 degrees F.

Then mix your Brownie Layer by combining 1/4 cup rice flour, 2 TBSP coconut flour, 1/4 cup coconut sugar, 1/4 cup cacao powder, 1/4 cup pumpkin purée, 1/3 cup water or dairy free milk, 1.5 TBSP nut butter and 1 tsp baking powder.

Press into bottom of a lines 9X9 baking tray and sprinkle marshmallows on top. Use vegan marshmallows to make this recipe vegan! 

Next, make your cookie layer by mixing 2 TBSP coconut flour, 3 TBSP coconut sugar, 1 TBSP nut butter, 2 TBSP pumpkin purée, 1/4 cup water/milk, handful of chocolate chips, sprinkle of cinnamon and three drops of vanilla stevia. Place on top of marshmallow layer and bake for around 30 minutes!

All that's left to do is devour. ;)
