Monthly Favorites and a Giveaway: April 2016 and a Love with Food!

Where did April go? Wait, I can answer that: group projects. Plenty of essays (The most enjoyable? Analyzing Taylor Swift's song and music video for "New Romantics" through a feminist lens). And a few friendly adventures here and there.

By the time this post goes live, I'll be truly alive - having survived my finals and made it back home. Which means I finally have time to throw it back to April.

What I'm Eating

Chia seed pudding over everything! As part of my work with Further Food, I review four of their recipes a month. When I saw coconut chia pudding, I couldn't resist adding it to my menu. Perfectly creamy, crunchy and naturally sweet!

Besides eating it alone for a snack, I enjoyed adding it on top of my green smoothie bowl breakfast and layering it with oatless zoats. Hidden veggies + healthy fats and protein = one happy belly!

Sweet potato fries made super thin and crispy by using my spiralizer! Though I definitely got my arm workout spiralizing these, my dinner of potato nachos with lots of veggies was a very acceptable reward

A big blackened chicken burger with lots of veggie toppings on a gluten free bun at Stacked: Food Well Built. What better way to celebrate the end of school than a family dinner where I can get a burger and fries (made in a separate fryer)? Nothing in my mind!

What I'm Doing

Going on too many cliff side walks to count. As I wrote last week, I've been down to the cliffs more after my break up than my five previous college semesters combined! Nothing like having a gorgeous view while catching up with friends!

Doing lots of packing...I'm actually writing this post on my last day of finals. Since I'll be heading home directly after my 1:30 Poetry final, this morning was spent loading up the car. Functional fitness? I say yes

Dreaming of all the sleep-filled and lazy days ahead of me. I managed to catch a cold the weekend before finals - and a day before a big presentation, go figure - so doing nothing but Netflix and smoothies sounds like heaven!

What I'm Planning

Spending even more time this summer experimenting with new recipes to share! I especially want to photograph and record the ingredients for my infamous stuffed zucchini. Considering I eat a version of these at least once a month, you readers deserve a (delicious) piece of the (cooking) action.
